Ingredients
- 2 cups apple cider
- 3 tbsp granulated sugar
- 1 3/4 cups all-purpose flour
- 2 1/2 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 3/4 cup unsalted butter, softened
- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 egg yolks, at room temperature
- 2 tsp vanilla
- 6 oz cream cheese, cold
- 2 tbsp apple cider reduction
- 1/4 cup granulated sugar for topping
- 1/4 tsp ground cinnamon for topping
- 1/8 tsp ground nutmeg for topping
- pinch ground allspice for topping
- 1–2 tbsp salted butter, melted for topping
Instructions
- Prepare an apple cider reduction by boiling the cider in a saucepan until it reduces to about 1 cup; let cool.
- Mix cold cream cheese with sugar and vanilla until smooth; refrigerate.
- In a separate bowl, cream softened butter and sugars until fluffy. Add egg yolks one at a time and mix in cooled cider reduction.
- Combine dry ingredients (flour, spices, baking powder, baking soda, salt) in another bowl, then gradually add to wet ingredients until just mixed.
- Preheat oven to 350°F (175°C). Scoop dough, flatten slightly, fill with cheesecake mixture, cover with more dough, roll into balls.
- Place on parchment-lined baking sheets, brush with melted butter, sprinkle spiced sugar mixture on top, and bake for about 11 minutes.
