  • 1 lb ground chicken
  • 1 egg
  • 1 tbsp olive oil
  • 1/2 yellow onion, diced
  • 1/2 Granny Smith apple, peeled and diced
  • 2 oz cheddar cheese, freshly grated
  • 1/2 c fine breadcrumbs
  • 1/4 cup parsley, chopped
  • 1/4 cup walnuts, finely diced
  • 1 inch piece of ginger, grated
  • 1 tsp soy sauce
  • 1 tbsp salt
  • Freshly cracked black pepper and cayenne to taste
  • 2 large or 3 medium sweet potatoes
  • 2 tbsp butter
  • 2 tbsp maple syrup
  • 1/2 tsp each: cinnamon, coriander, cumin, and nutmeg
  • Salt and cayenne to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Bake whole sweet potatoes on a baking sheet for about 60-75 minutes until tender.
  3. Sauté onion and apple in olive oil until softened; let cool.
  4. In a bowl, mix ground chicken, egg, breadcrumbs, cheese, parsley, walnuts, ginger, salt, pepper, cayenne, and cooled onion/apple mixture.
  5. Form into 14-16 meatballs and place on a greased baking sheet; bake for 15 minutes.
  6. Peel baked sweet potatoes and mash with butter, maple syrup, and spices until smooth.
  7. Serve meatballs alongside spiced sweet potatoes.
